The gastronorm pan is the module the entire commercial kitchen is built around — steam tables, combi ovens, blast chillers and bain-maries all accept the same EN 631 grid, from the GN 2/1 (650 × 530 mm) down through GN 1/1 to fractional sizes. Deep-drawn 304 stainless construction (0.6–1.0 mm depending on size and duty) gives the corners radii that clean easily and the rigidity to stack loaded, while anti-jam rim designs keep pans separable after hot cycles where cheaper pans vacuum-weld together.
